January’s cocktail: The Noilly Gimlet

Jake from The Wren’s Nest has concocted a shake-up which is light, refreshing and a very healthy looking green. His Noilly Gimlet uses an 18% abv fortified wine as a base rather than the traditional gin, so it’s *hardly alcoholic at all* – perfect for Dry January then.

What you need

  • 20ml fresh lime juice
  • 12.5 ml sugar syrup (caster sugar gently dissolved in hot water at a ratio of 1:1 ratio sugar to water and left to cool)
  • 50ml dry vermouth (Jake uses Noilly Prat)
  • 3 thin slices of cucumber
  • a small handful (8-10 leaves) of basil
  • a long, thin ribbon of cucumber to garnish
  • ice cubes to fill a tumbler

What to do

  • Put the cucumber slices, basil and lime juice into a large glass or cocktail shaker and muddle (that’s bartender talk for mashing or pressing down on the basil and cucumber to release the flavours – you can use the end of wooden spoon)
  • Add sugar syrup and vermouth and shake well
  • Strain over ice cubes in a tumbler and add the cucumber ribbon garnish
